Do authenticators have a defence for autographs that have been lifted, with all the tricks in the business out there forgeries are rampant, can the authenticators test inks. What are they doing to stay ahead of the game?

I would doubt very much there is anything "scientific" that they  are doing, and I for one would not want them to.  I would be nervous about taking ink samples.   Authentication is an art and not a science despite "forensic" being used a bit freely.  Outside of a few tricks with black lights I do not think there is much being done right now.    I wish there was a database collected to easily compare real and fake autographs.  Some have tried starting and there are specific posts on here that are valuable but would be nice to have an alphabetical listing.
