I was just curious as to whether or not a Cut Gem Mint 10 Alec Guinness Autograph dated 1971 (pre-star wars) would be worth more or less than a cut post-Star Wars Alec Guinness autograph?

The most valuable Sir Alec Guinness autographs are Star Wars autographs.  They command the most resale value.

I've seen Alec Guinness items over the years go for as little as $20 in a non Star Wars role. Star Wars items signed by him command significantly more money and can go for very high prices depending on the type of image etc.

Does anyone know the value of a signed photo from Alec Guinness as Obi Wan Kenobi (head portrait) in 4x6?

 I must say that I'm amazed how much a Star Wars' Guinness can go for. I'm pretty sure that I saw one go at a recent "physical" auction for over £1,000 and there is one being auctioned tonight that is already at $1,100:

If this wasn't a movie still you would essentially be buying a simple head and shoulders shot with just a bit of movie costume shown. 

As you will see from the link above the final price was $1,570. Seems incredible to me but then I'm often surprised at the premium some people will pay for what an autograph is on.
