I am having some suspicion based on what I observed, I might be wrong. The check was made ‘July 14, 1972,” by George therefore he signed the check that 14th of July. Now, there is a stamp that says “PAID July 25, 1972,” which I am assuming that’s when it was paid to the person that received this check. If George made and signed the check on the 14th and the “Paid” was added on the 25th by the bank shouldn’t the “PAID” stamp be on top of his signature based on the sequence of events?

I agree, it's a nice, real George signature in my opinion.
Don't see many garage bills for £9.90 these days!
If I'd been the garage owner I'd have kept the cheque rather than bank it - even then £9.90 must have been cheap for a George!
